Ingredientes para la masa
- 500 g. de harina de fuerza
- 25 g. de azúcar
- 1 sobre de levadura liofilizada ó 20 g. de levadura de panadería
- 75 g. de almíbar de piña
- 125 g. de yogur
- 1 huevo grande
- 25 g. de mantequilla
- 10 g. de sal
Ingredientes para el relleno
- 8 rodajas de piña en almíbar
- 18 fresones naturales
- 50 g. de mantequilla fundida
- 150 g. de azúcar
Preparación
- Hacer un volcán con la harina y, en el centro, deshacer la levadura con el azúcar y un poco de almibar a temperatura ambiente.
- Cuando la levadura se haya disuelto, añadir el resto del almibar y el yogur. Amasar e incorporar la mantequilla en pomada y la sal.
- Agregar el huevo y trabajar la masa hasta obtener un compuesto homogéneo. (Esta masa es bastante pegajosa).
- Dejar fermentar cubierto de papel film una hora, o hasta que haya doblado su volumen.
- Dividir la masa en tres partes iguales.
- Estirar cada una de ellas sobre una superficie enharinada, formando un rectángulo de 40 x 15 cm. y sobre cada uno de ellos, hacer lo siguiente:
- Pincelar la superficie de la masa con la mantequilla fundida.
- Cortar 2 rodajas de piña en cuadraditos y distribuirlos sobre la masa procurando dejar libres los bordes.
- Colocar 6 fresones en uno de los extremos a lo largo del rectángulo.
- Espolvorear con azúcar y enrollar apretado, como si fuera un brazo de gitano.
- Repetir éste paso con las otras dos porciones de masa y formar una trenza.
- Colocar sobre la bandeja de horno, a la que se le pondrá papel parafinado para que no se pegue al fondo. Pintar con huevo batido y dejar fermentar una hora o hasta que veamos que ha doblado su volumen.
- Volver a pintar con huevo batido, y meter en horno precalentado a 180º con calor arriba y abajo (sin turbo) durante 30 minutos. Si vemos que se dora demasiado, cubrir con un papel de aluminio.
- Sacar y dejar enfriar sobre una rejilla, y adornar si se desea, con azúcar glas.
